Stavros from Clapham Junction Wine Bar in Banyo has shared with us the secret recipe for one of their signature cocktails – the very popular Junction Shrub. Using locally brewed ginger beer from Aether Brewing, and their signature shrub, you’ll be able to taste the difference with this delicious cocktail.
Ingredients
• 30ml Sailor Jerry spiced rum
• 30ml Cointreau liqueur
• 30ml pineapple shrub
• 120ml Aether Brewing Ginger Beer
• Dash of bitters
• Dehydrated orange
Method
1 Top a highball glass, with ice
2 In a mixing glass pour the spiced rum, Cointreau and pineapple shrub and stir well
3 Double strain in the highball glass
4 Top with ginger beer
5 Add a dash of bitter and garnish with the dehydrated orange
TIP: Clapham Junction makes its own signature shrub. To make your own, search for shrub recipes online and, for the best results, Stavros suggests using apple cider vinegar.
